RECIPE: Sprouts salad - Moong sprouts!

Sprouts salad
Ingredients:

Moong sprouts – 3/4 measuring cup or 100 gm
Chopped cucumber – ¼ cup
Chopped onion – ¼ cup
Chopped coriander - ¼ cup
Lemon juice – 2 tsp
Finely chopped green chillies – ½ tsp
Tahini – 2 tbsp
Garlic – 2 cloves
Black pepper powder – ½ tsp
Apple cider vinegar – 2 tsp

In a bowl, add moong sprouts, cucumber, onion, coriander and green chillies. Sprinkle some salt and keep aside. Grind tahini, garlic, black pepper powder, lemon juice, apple cider vinegar and salt. Add enough water to give it pouring consistency. Pour this dressing over the salad and mix it together.

Tahini Method – lightly roast sesame seeds. Grind them finely. Add a little extra virgin olive oil and grind until it becomes a smooth paste.

मूग स्प्राउट्स ३/४ कप किंवा १०० ग्रॅम्सबारीक चिरलेली काकडी - १/४ कपबारीक चिरलेला कांदा - १/४ कपबारीक चिरलेली कोथिंबीर - १/४ कपलिंबाचा रस - २ टी स्पूनबारीक चिरलेली हिरवी मिरची - १/२ टी स्पूनताहिनी - २ टेबल स्पूनलसूण - २ पाकळ्याकाळी मिरी पावडर - १/२ टीस्पूनअॅपल सायडर व्हिनेगर - २ टीस्पून

आता, ताहिनी, काळी मिरी पावडर, लसूण, लिंबाचा रस आणि अॅपल सायडर व्हिनेगर हे सर्व मिक्सरमध्ये बारीक करून घ्यावे... त्यात गरजेनुसार पाणी घालून ते सॅलड वर ओतता येईल असे करावे.


हे ड्रेसिंग सॅलड वर ओतून छान मिसळून घ्यावे.

तीळ थोडेसे परतून घ्या आणि त्यात थोडे आॅलिव्ह आॅइल घालून , त्याची मिक्सरमध्ये बारीक पेस्ट करून घ्या..


एका भांड्यात मोड आलेले मूग, काकडी, कांदा, कोथिंबीर आणि हिरवी मिरची सगळं एकत्र करा..... थोडे मीठ घालून एकत्र करून घ्यावे

ताहिनी:
तीळ थोडेसे परतून घ्या आणि त्यात थोडे आॅलिव्ह आॅइल घालून , त्याची मिक्सरमध्ये बारीक पेस्ट करून घ्या..

Recipe Dalia Kheer

Eid Mubarak
SPECIAL RECIPE: Dalia Kheer! 

INGREDIENTS:

• Broken Emmer Wheat / Khapali Dalia 1 cup
• 10-12 almonds soaked and peeled
• 10-12 cashew nuts soaked
• ¼ cup sliced pistachios
• ¼ cup raisins
• Nutmeg powder 2 tsp
• Poppy seeds 3 tbsp
• Coconut milk 3 cups
• Dates paste 1 cup

DIRECTIONS:
• Wash the Dalia and drain it. Roast it until fragrant. Put it in the pressure cooker container with 2 cups water and the raisins. Pressure cook it. Heat the poppy seeds lightly and grind them to make a fine powder. Grind the soaked nuts with 1 cup coconut milk to make a smooth paste. 

• Take the Dalia in a heavy bottom pan. Add the dates paste and mix it well. Cook on the slow flame. Add nuts paste and mix well. Now add coconut milk and let it cook for 10-15 min. Add khaskhas / poppy seeds powder and nutmeg. Mix it well. Cover and keep for 5 min before serving. Add pistachio slices and Serve hot.

• You can add cardamom powder if you want.

NOTE:
1) Diabetics with high/ unstable sugars, only 1/3 cup (50 ml) quantity recommended..
2) Diabetics with stable sugars/ free of medications must try a full cup (150 ml) and do a self assessment.

RECIPE for diabetics पालक चावल Palak Rice

PALAK RICE: RECIPE!


Palak Rice is healthy and flavourful rice dish made from spinach. Today, try this recipe and share your feedback with us.

INGREDIENTS:
• Cooked brown basmati rice 2 cups
• Thick spinach/palak puree 1 cup
• Green coconut chutney 1 cup – add more coriander as it should be real green
• Oil 3 tbsp
• Peppercorns 8-10
• Cloves 5-6
• Cinnamon stick 1 ½ “ long
• Salt

DIRECTIONS:

Heat oil in a pan. Add peppercorns, cloves and cinnamon and cover. When it leaves nice fragrance, switch off the gas, open the lid and put rice and sprinkle salt. Put spinach purée and coconut chutney and mix it well making sure that rice grain does not break. Start the gas again. Cover the rice and let it cook on a very low flame for 5 min.
Or heat the tawa and put the pan with rice on the tawa and let it cook for 10 min.

पालक चावल!

सामग्री:

• पके हुए ब्राउन बासमती चावल 2 कप 
• 1 कप पालक/ पालक puree 1 cup
• हरे नारियल की चटनी 1 कप – अधिक धनिया डालें क्योंकि यह हरीहोनी चाहिए 
• तेल 3 बड़ा स्पून
• काली मिर्च 8-10 
• लौंग 5-6 
• दालचीनी छड़ी 1 ½ "लांग 
• नमक

निर्देशों: 
एक पैन में तेल गरम कीजिये । काली मिर्च मकई, लौंग और दालचीनी डालेऔर कवर करे। जब यह अच्छा खुशबू छोड़ता है, गैस बंद, ढक्कन खुला और चावल डाल दे और नमक sprinkle करे। पालक प्युरी और नारियल की चटनी डाल कर अच्छी तरह से मिला लें जिससे चावल का अनाज नहीं टूटेगा । गैस फिर से शुरू करो । चावल को ढककर रखें और इसे 5 मिनट के लिए बहुत कम लौ पर पकने दें ।

Special for diabetics: Tomato Omelette Recipe

TOMATO OMELETTE

Healthy Tomato Omelette

Ingredients:
  • 1 Cup Besan/Gram Flour
  • 2 Tomatoes
  • ½ Onion
  • 3-4 Green Chillies
  • ¼ Tsp Carom Seeds (Ajwain)
  • ½ Tsp Cumin Seeds/Cumin Powder
  • ¼ Tsp Turmeric Powder
  • ½ Tsp Ginger Paste
  • Kasoori Methi/Dried Fenugreek Leaves (Optional)
  • Oil for frying
  • Salt to taste

Method:
Chop tomato, onion and green chilies very fine. Put chopped stuff into a bowl. Add carom seeds, cumin powder, turmeric powder, ginger paste, kasoori methi and salt to taste. Then add besan. Mix well. Then add approximately 1 cup of water and mix everything really well. 
If you want thin and crispy omelettes, keep the batter little bit thin but not very runny. If you prefer thick omelette, then add less water. Cover and let it rest on a counter for 15 mins. Heat pan on medium heat. Once heated, spread 1-2 tsp of oil all over the pan. Pour 1-2 ladleful of batter and spread it evenly.Cover and cook for 2-3 mins. 
The upper side will get cooked because of the steam. Flip and cook uncovered from other side for a min or so.Take out in a dish and serve hot with green chutney.
Recommended even for non-diabetics  :)

आजची पाक कृती : 
सामग्री:
1 कप बेसन 
2 टमाटर
½ प्याज
3-4 हरी मिर्च
¼ टी स्पून कैरम बीज (अजवेन)
½ टी स्पून जीरा पाउडर
¼ टी स्पून हल्दी पाउडर
½ टी स्पूनअदरक पेस्ट
कसूरी मेथी / सूखे मेथी की पत्तियां (वैकल्पिक)
तलने के लिए तेल
नमक स्वादअनुसार

तरीका:
टमाटर, प्याज और हरी मिर्च को काट ले। कटा हुआ सामान एक कटोरे में रख दे। अजवेन, जीरा पाउडर, हल्दी पाउडर, अदरक पेस्ट, कसूरी मेथी और स्वाद के लिए नमक डाले। फिर बेसन डाल दे। अच्छी तरह मिलाएं। फिर लगभग 1 कप पानी डाल दे और सब कुछ अच्छी तरह मिलाएं। 

यदि आप पतले और कुरकुरे आमलेट चाहते हैं, तो batter को थोड़ा पतला रखें लेकिन बहुत पतला ना करे। यदि आप थिक आमलेट पसंद करते हैं, तो कम पानी डाले। कवर करें और इसे 15 मिनट के लिए छोड़ दे। मध्यम आच पर पैन गरम करे। एक बार गरम होने पर, पूरे पैन में 1-2 टीस्पून तेल फैलाएं। 1-2 टी स्पून batter डाले और इसे समान रूप से फैलाओ। 2-3 मिनट के लिए कवर करेऔर पकाएं। 

भाप की वजह से ऊपरी भाग पक जाएगा। एक मिनट या उससे अधिक के लिए दूसरी तरफ से भी पकाएं। हरी चटनी के साथ गर्म serve करे।

FRESH RAJMA BEANS SALAD

INGREDIENTS:
2 cups steamed fresh rajma
½ cup lightly steamed carrot cubes
1 cup cherry tomato halved
¼ cup mint leaves
Salt
Pepper
Dressing
1 tbsp apple cider vinegar
1 tbsp olive oil
Salt
Pepper
DIRECTIONS:
Put the beans, carrots and cherry tomatoes in a bowl. Add roughly chopped mint leaves, salt and pepper. Whisk the dressing ingredients in a small bowl. Pour over the salad and toss gently.

२ कप राजमा उबला हुआ
१/२ कप हल्के ढंग से उबले हुए गाजर के cubes
१ कप चेरी टमाटर आधा
¼ कप पुदीने की पत्तियां

दिशानिर्देश:
एक कटोरे में बीन्स, गाजर और चेरी टमाटर डाले। कटा हुआ पुदीने की पत्तियां, नमक और काली मिर्च डाल दे। मिक्स। एक छोटे कटोरे में ड्रेसिंग सामग्री डाले। सलाद पर डालो और धीरे से टॉस करे।

METABOLIC RATE CALCULATOR

The basal metabolic rate or BMR is the number 
 of calories that your body uses each day to do normal bodily functions.

BMR depends on
1) Age
2) Weight (including muscle mass)
3) Gender
4) Athletic ability
5) Calorie intake

As shown in the image, the bulk of the calories are used by our 
body for basic functions.

Physical activity and digestion are distant second and third in line.
